fix(install): remove premature pkg-config check (#228)

pkg-config is included in the package list to install, so the script
should not exit with an error if it's not already installed. The check
was preventing installation on fresh systems like WSL Ubuntu 24.04.

The script already has proper fallbacks for when pkg-config is not
available (detect_vulkan and detect_typelib_path both check before
calling pkg-config).
